Whiskey Cider Smash
Makes 4 drinks
8 oz bourbon
16 oz apple cider
1/4 cup fresh lemon juice
Combine and serve over ice with a lemon garnish
Endive with Humboldt Fog, honey and toasted almonds
2 to 3 heads endive (depending on size)
6 oz Humboldt Fog cheese
4 oz honey
1/2 cup almonds, slow roasted until deeply toasted, about 30 minutes at 325 degrees, rough chopped
1/4 bunch fresh chervil. Sprigs picked into cold water to keep them fresh and bright
Trim endive leaves to be manageable size (no more than 2 bites). Top with slice of cheese, drizzle of honey, and sprinkle of toasted almonds. Top with chervil garnish.
Grilled New York Strip on baguette crisp with tarragon mustard and baby arugula
1/4 baguette, sliced crosswise into 1/4" thick slices, drizzled with olive oil, salt and pepper. Toast 15 minutes at 325 or until light golden.
6 ounces NY Steak, seasoned well with salt and pepper, grilled to Medium rare.
Mustard sauce: combine 1/2 cup mayo with 1/4 cup dijon mustard and 1/4 bunch fresh tarragon, chopped fine
2 cups baby arugula
Prepare baguette toasts. Mix up sauce. grill steak.
To serve: Assemble toasts with mustard sauce. Top with slice of grilled steak and top with leaf of baby arugula.
